Jajaye Banana Bread Recipe - A Unique Twist on a Classic Favorite
Banana bread is a beloved classic, but have you ever considered giving it a twist? Today, we'll take you on a journey to create a mouthwatering Jajaye Banana Bread that's sure to become your new favourite. This recipe combines the goodness of ripe bananas with the subtle sweetness of LTB’s Jajaye, resulting in a moist and flavourful loaf that's perfect for breakfast, snacks, or dessert.
Ingredients
- 70g sugar
- 80g butter (at room temperature)
- 140g all-purpose flour
- 2 ripe bananas
- 2 eggs
- 1 tablespoon baking powder
- 2 LTB Jajaye teabags
Instructions
1: Prepare LTB’s Jajaye Tea - Start by brewing your tea concentrate. Heat 1/2 cup of hot water and steep the two tea bags of Love To Brew's Jajaye Vanilla Rooibos Tea in it. Allow them to steep for about 5-7 minutes, infusing the water with the rich flavors of vanilla and rooibos. After steeping, remove the teabags and let the tea cool to room temperature.
2: Mash the Ripe Bananas - While the tea is cooling, peel the ripe bananas and mash them in a bowl using a fork or a potato masher. Note that the riper the bananas, the sweeter your banana bread will be.
3: Cream Butter and Sugar - In a separate mixing bowl, whisk together the softened butter and sugar until the mixture becomes light and fluffy. This will create a perfect base for your banana bread.
4: Combine Bananas and Tea - Add the mashed bananas to the butter and sugar mixture. Mix well until everything is well combined. Now, incorporate the cooled Love To Brew's Jajaye tea concentrate into the wet ingredients. This infusion will give your banana bread a unique and delightful flavour. Mix thoroughly.
5: Add Eggs and Dry Ingredients - Crack the eggs into the banana mixture one at a time, ensuring each egg is fully incorporated before adding the next. In another bowl, sift together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Be careful not to overmix, as this can make the banana bread tough.
6: Bake to Perfection - Pour the batter into a greased loaf pan and smooth the top with a spatula. Bake in a preheated oven at 175°C for approximately 45-50 minutes, or until a toothpick inserted into the centre comes out clean or with just a few moist crumbs.
